In our house pizza is a staple food. It’s a comfort food, savory, ate during football gatherings, and just overall WONDERFUL. We have worked on the many ways we can eat pizza now that we are watching our waistlines. This is by far one of my favorite recipes we’ve tried! Today we made Portabella Pizza Caps, they are really easy, low in fat, low in carbs and DELICIOUS!
First start with your ingredients (note you can add anything you would to a pizza, this is just what we used). Our ingredients included portabella mushroom caps, pizza sauce, turkey pepperoni, and low moisture mozzarella cheese.
After removing the stems and washing off our porabellas we put them on a plate and added the turkey pepperoni. We tried many different ways of placing the turkey pepperoni and found it best to roll them a bit, this way you can fit more!
After adding the turkey pepperoni we added the sauce. Not a lot of sauce is needed. Take the sauce on a spoon and place it in and around the pepperoni.
The last step is CHEESE (no pizza is complete without cheese). Like the sauce not a lot of cheese is needed. Sprinkle the Cheese over the sauced pepperoni. (we added some sweet basil to the top, really just for looks)
Time to bake! We transferred them to a tinfoil lined cookie sheet (easier clean up).
Bake the pizza caps at 350 for approximately 10 minutes. After 10 minutes remove from oven, move oven rack to the second highest location, place pizza cups back in oven and broil until brown.
Now ENJOY! Wait for them to cool a bit as the sauce inside is very HOT!
* Large portobello mushroom caps (we had 6 caps), stems removed
*1/2 cup pizza sauce
*1/2 cup mozzarella cheese
*18 slices turkey pepperoni (3 slices per pizza)
1.) Preheat oven to 350 degrees F
2.) Place the washed, stem removed mushroom caps on a baking sheet. Add turkey pepperoni, pizza sauce, and cheese (we added sweet basil to the tops).
3.) Bake for approx. 10 minutes
4.)Broil for approx. 5 minutes (not needed but gives them a golden brown color).
